Mac and Cheese Recipe

Here’s a creamy, comforting Mac and Cheese recipe that’s simple, delicious, and always a hit!


Makes enough for a family of 4.


Ingredients:

• 2 cups of Macaroni

• 2 cups whole milk

• 2 cups heavy cream

• 2 tbsp unsalted butter

• 2 tbsp plain flour

• 1 ½ cups shredded sharp cheddar cheese

• 1 cup shredded Gruyère or mozzarella cheese (optional for extra creaminess)

• 1 tsp Dijon mustard (optional, but adds a nice depth of flavour)

• Salt & pepper to taste

• Pinch of Smoked paprika - brings out the flavour of the cheese (optional)

• 1/2 cup breadcrumbs (optional, for a crispy topping)


Instructions:

  1. Cook the Pasta:

  2. Bring a large pot of salted water to a boil. Cook the macaroni according to package instructions, about 8-10 minutes. Drain and set aside.

  3. Make the Cheese Sauce:

  4. In a large saucepan, melt the butter over medium heat.

  5. Stir in the flour and cook for about 1 minute until it forms a smooth paste (this is your roux).

  6. Gradually whisk in the milk and heavy cream, making sure to stir constantly to avoid lumps.

  7. Keep whisking until the sauce thickens, about 3-5 minutes.

  8. Reduce the heat to low, then stir in the mustard, cheese, and season with salt, pepper, and cayenne or paprika. Continue stirring until the cheese is fully melted and the sauce is smooth.

  9. Combine the Pasta and Sauce:

  10. Add the cooked macaroni into the cheese sauce and stir until everything is well- coated.

  11. Optional: Add a Crunchy Topping:

If you want a crispy topping, preheat the oven to 190°C. Transfer the mac and cheese to a baking dish and sprinkle with breadcrumbs. Bake for 15-20 minutes, or until the top is golden and crispy.

  1. Serve hot, and enjoy the creamy, cheesy goodness!


Tips for the Best Mac and Cheese:

• Use a mix of cheeses for depth of flavor. Sharp cheddar provides a strong flavour , while Gruyère or mozzarella makes it creamy.

• For extra richness, you can add a little bit of cream cheese or sour cream to the sauce.

• Feel free to add extras like crispy bacon, sautéed onions, or even a handful of spinach!
